10 CLOVE GARLIC + TOMATO BORLOTTI BEANS
A warming, one-pan dinner built for getting back into routines - without the heavy, inflamed feeling.
I developed this recipe to prioritise food-first comfort while supporting your gut health. It packs in high plant diversity + prebiotic fibre to nourish your gut microbes + support effortless digestion as autumn schedules pick back up. Finished with fermented brown rice miso for active microbiome support + deep umami depth.
THE INGREDIENTS
1 tablespoon extra virgin olive oil
600 g mixed heirloom cherry tomatoes
400 g borlotti beans (drained weight)
10 cloves (1 whole bulb) of garlic
1 tablespoon organic brown rice miso paste
1 ball of organic burrata cheese
a handful of fresh basil
1/2 teaspoon Kalahari desert salt
1/2 teaspoon freshly ground black pepper
4 slices of crusty sourdough bread, to serve
THE METHOD
Roast the Base: Preheat oven to 190°C. In an oven-proof pan, toss tomatoes with olive oil + a pinch of salt. Slice the top off the garlic bulb, place it cut-side down in the centre of the tomatoes, + roast for 30 - 40 minutes until tomatoes are bursting + juicy.
Caramelise the Garlic: Remove garlic bulb from pan, wrap in baking paper, + return to oven for another 15 minutes until completely soft + sweet.
Fold + Simmer: Pour borlotti beans + miso paste directly into the tomato pan, gently breaking up tomatoes to create a saucy base. Tear in fresh basil + squeeze in the soft roasted garlic, stirring to combine.
Assemble + Finish: Divide beans into bowls, top with fresh burrata, a drizzle of olive oil, salt, + black pepper. Serve immediately with warm, crusty sourdough bread.
